Easy to dry, cut a bunch and hang upside-down for 4-6 weeks in a shady & airy place. They retain their colours when dried like this - if left on the plant they dry to a light brown. They can last dried for several years hence they are known as everlasting, also termed strawflowers or paper daisies.
