Slower growing Acadia is an ideal choice for sowing for a summer crop. Harvest young for baby leaves or allow the plants to grow on for mature, richly flavoured leaves. The oval, smooth-edged leaves are slightly bubbled and produced on upright plants, helping to keep soil splash to a minimum. Acadia is also resistant to downy mildew, making it a good choice for cool, damp UK conditions.

Sow: from mid to late April to the end of June & again in September. Sow 15-25mm deep in pots or modules, which minimise root disturbance when you transplant. Plan to sow some spinach every 2-4 weeks for a continuous supply. Seed can also be sown in situ once the soil is warm.

Grow: space closely for baby leaves and treat as cut-&-come-again; they will resprout several times. Plant at 20-25cm spacing for mature leaves. Keep well watered, particularly during warm, dry weather. Mature plants can be pulled up to harvest and replaced with a later transplant.

Eat & Enjoy: although Acadia is upright you should always wash the leaves before eating. Use small leaves raw in salads or make a smoothie. Wash mature leaves, shake off the excess water and cook lightly cook without adding any more water. Slice after cooking, season and serve. Enjoy with eggs, add to quiche or stews, or stir into a lovely curry.
