For glossy, low rosettes with a slightly nutty, minty edge, Vit is hard to beat. It’s a real gourmet pick for winter salads, but also holds its own when cooked—steam it like spinach and finish with a drizzle of oil to bring out its flavour. Easy to grow and full of character, it’s a top choice for cold-season greens.

SOW: in late winter/early spring and autumn sow under cover, at all other times sow outside. It can bolt in hot weather. It can be started in modules but it is very successful sown in situ - in a moistened seed drill or covered with moist sacking or fleece until germinated (can be slow in hot weather)
GROW: generally a trouble free crop. Protect crops in winter with cloches or grow in an unheated greenhouse but do keep them well ventilated. Harvest after about 12 weeks. You can cut the whole head and leave the plant to resprout (usually only once) or pick individual leaves as you need them – they do wilt quite quickly so pick as you need them.
ENJOY: for a winter salad or to serve hot: cook as you would spinach and serve with a drizzle of oil to complement the flavour.
