White Eye is a lovely open pollinated variety of sprouting broccoli and, as the name suggests, it produces white spears. These are sweet and tender and grow in profusion just when fresh veg from the garden can be in short supply. These plants tend to grow a little shorter than their coloured cousins, their flavour is outstanding.
SOW & GROW: seed depth 10-15mm in a tray, during April to June. Pot on when they have their 1st pair of leaves. Gradually harden off before planting out when about 15cm tall in June or July. Plants need a 50-60cm spacing to give them room to grow. Underplant with short temporary crops (such as salads). If your garden catches the wind you may need to stake your plants.
EAT & ENJOY: each plant can crop for up to 8 weeks. Cut just above a leaf joint, 1st central head and then the side-shoots, keep picking to encourage more shoots: don’t strip a plant fully or let it flower as this stops side shoots developing. About three of these plump spears make a serving. We like to steam them as soon as possible after cutting for the best flavour. Serve with a white sauce, hollandaise or just with butter. Yum
