Flowers are a feast for the eyes and a lift to the spirit, and some can earn their place on your plate as well. Sow this spring and by summer you will be picking fresh petals to add to salads, cakes and savoury dishes. These five varieties promise far more than good looks.

It’s an easy way to bring colour and flavour to everyday meals and make the most of what you grow. For the best results, pick blooms fresh and undamaged by weather or insects.

They don’t need to stay in the flower border. Tuck them among your vegetables and herbs to attract pollinators and bring extra life and balance to your plot.

 

Malope Vulcan – large, trumpet-shaped silky flowers in a rich magenta-pink with a bright green star in the centre. These beautiful blooms are edible with a very mild flavour so scatter them and enjoy as a decorative garnish with salads, cakes and cheeses.  And if you need more reasons to grow then the flowers will last 10 days in a vase, whilst bees and pollinators also love them. Flowers June to October.  Height to 90cm (50 seeds)

Marigold Spanish Brocade – probably the most versatile of edible flowers. Bold and bright in the garden, the petals can be used fresh or dried as a saffron alternative, adding golden colour to bread, butter, cheese, curries and rice. The flavour is mild with tangy, slightly bitter herbal tones with a warm, spiced aroma. Lovely scattered over salads or fruit, especially with banana, pineapple, citrus, berries or a drizzle of honey. These plants are also said to deter garden pests such as whitefly.  Flowers June to October. Height to 30cm (100 seeds)

Nasturtium Black Velvet – unique rich velvety red-black petals surround a dusky centre. These flowers, and the leaves, will add a slight pepperiness to any dish you add them to. Salad, fish and rice dishes are all good choices. Height to 30cm (20 seeds)

Ox-Eye Daisy – this native perennial wildflower has edible parts. Scatter the white petals over a salad where they bring a touch of sweetness and make a lovely contrast over red and purple salad leaves.  The bright centres add an almost crunchy texture. Young basal and stem leaves have an aromatic herby flavour with a lemon hint. Flowers can appear from June to August. Height to 90cm (500 seeds)

Tagetes Tangerine Dream – smothered all summer by masses of small intense orange flowers. The petals have a citrus flavour, ideal for scattering on salad and fish dishes. Blooms late May to October.  Height 25cm (100 seeds)
