Delicacy White ought to tempt you, it is a little milder then the purple skinned varieties and a little quicker too. You can trim young leaves for eating as steamed greens whilst the ‘bulbs’ grow on, they only need 8 or 9 weeks to reach 5-7cm in diameter and the perfect size to pull. The bulbs have a delicate, sweet flavour and a crunchy texture like a water chestnut and can be enjoyed raw or cooked.

SOW & GROW: between late February and August, in situ or modules, seed depth 10mm, to transplant when no more than 5cm tall. Make 2 sowings 4 weeks apart for a staggered harvest. They grow best in cooler weather.
GROW: space plants at 10-20cm, we find them to be a trouble-free crop as they are heat tolerant (keep watered regularly) and resistant to pests and diseases. They only need 8 or 9 weeks to reach 5-7cm in diameter and the perfect size to pull. Autumn crops can be allowed to grow larger and be pulled as late as December.
EAT: you can trim young leaves for eating as steamed greens whilst the ‘bulbs’ grow on. Slice or grate bulbs for salad, coarse grate for coleslaw. Cook the bulb, boil or steam, serve with a sauce or stuff them.
