EAT: for the best flavour eat them fresh. Young Kohl Rabi can be scrubbed and boiled whole: serve with butter, a white sauce or mash them. We use the larger Kohl Rabi diced in stews. To freeze: blanche for 2 minutes, plunge into cold water, drain & dry. Cook from frozen in boiling water for about 6 minutes. Serve in pieces or mashed with butter (try adding pepper or nutmeg).
