Chenopodium bonus-henricus, better known as Good King Henry, has been cultivated for hundreds of years. The alternative names of ‘Poor Man’s Asparagus’ and ‘Lincolnshire Spinach’ are giveaways about its potential dual uses. Although considered a herb historically, it is now getting more interest as a perennial veg (more widely known through the spread of permaculture ideas and techniques).

SPRING: sow in plugs or seed trays, cover with perlite perlite or vermiculite and take care not to overwater. Harden off and transplant when large enough spacing at 25cm apart. Allow 1 year before harvesting to enable plants to develop. Earth up established plants and cut some shoots when 12-15cm long to use like asparagus
SUMMER: harvest the flowering spikes as they begin to open. Later harvest the larger leaves to use as spinach
AUTUMN: cover the bed with a thin layer of manure or compost to feed the plants.
