The young red veined leaves make a lovely addition to salads while small beets (if you cannot wait for them to grow) can be cooked whole to serve as a hot veg. SOW your beetroot seeds 10-20mm deep. Use cloches to warm the soil for early sowings (that is during February to April or a little later in colder areas).
