Beetroot is full of vitamins and minerals and packed with powerful antioxidants – it has been described as a health-food titan! Both the leaves and root can be eaten - the leaves can have a bitter taste so eat them when young whereas the round root is sweet and high in fibre. Beetroot is delicious eaten raw due to its high sugar content but don’t worry as its other nutritional properties more than offset this. Not sure about eating raw beetroot than cook them or pickle them.
