The delicate nutty flavoured flesh is a good source of vitamin A. The long roots have a dark skin colour. Although originating in Spain it is often found as an ingredient in French recipes. This plant can be treated as a perennial. Sow April-May for harvesting in the autumn onwards, leaving small roots to grow another year.
