A New England heirloom: small, fairly rounded, with yellow-orange flesh and a well-deserved reputation for exceptional flavour and texture. We use the for roasting and baking. You can use them to make pies, cheesecake, pancakes and flans. Hollow them out, stuff and bake as you would an acorn squash. Cubed and roasted it makes an excellent side dish. Slice into wedges and grill, cook down for curry or chilli…the list goes on and on.  Delicious and delightful, weighing in at 2-3kg, 15-20cm in diameter.
